Sausage Sizzle Skewers

Ingredients

  • thyme lemon fresh herb, 10g punnet
  • 1 pack of Woolworths Beef & Pork Sausages 500g
  • 1 x Red capsicum, deseeded , cut into large squares
  • 1 x Punnet of Select button mushrooms
  • 2 x medium zucchini, peeled lengthwise
  • 1 x red onion, peeled and quartered
  • 2 tbs BBQ onion relish
  • 90ml Select extra Virgin olive oil
  • 1 tbs mustard
  • Juice of 1 lemon
  • 2 sprigs of thyme
  • Salt
  • Cracked black pepper
  • Hot dog rolls
  • Woolworths Rocket Leaves
  • Avocado
  • Red Chillis

Method

1. Soak the skewers in water for a few minutes to prevent them from burning on the grill.

2. Preheat a grill pan/bbq to a medium heat.

3. Skewer the sausages evenly with the red onion, zucchini , mushrooms and red capsicum.

To make the glaze.

1. Add 2 tablespoons bbq onion relish, 90 ml extra virgin olive oil , juice of 1 lemon, chopped thyme, salt and pepper to a medium sized bowl. Mix together.

2. Brush the skewers with the glaze and add to the grill/bbq.

3. Cook turning occasionally for about 15 minutes.

Serve in a hot dog bun with smashed avocado, bbq glaze, rocket leaves and chopped chilli.
